Vegan Pad Thai

Ingredients

Rice Noodles 8 oz

Tofu 14 oz

Broccoli 2 cups

Carrots 2

Red Bell Pepper 1

Scallions 4

Roasted Peanuts 1/4 cup

Cilantro 2 tbsp

Lime 1

Instructions

Prepare Noodles

Soak rice noodles in hot water according to package instructions, around 10 minutes. Drain and set aside.

Cook Tofu

In a skillet, sauté tofu in oil until golden brown, about 5-7 minutes. Remove from skillet and set aside.

Stir-fry Vegetables

In the same skillet, stir-fry broccoli, carrots, and bell pepper until tender-crisp, for about 5 minutes.

Assemble Pad Thai

Return tofu to the skillet. Add cooked noodles and scallions. Pour in the Pad Thai sauce, toss everything together. Cook for another 2-3 minutes.

Serve

Divide Pad Thai among plates. Garnish with chopped peanuts, cilantro, and serve with lime wedges on the side.
