Vegan Pad Thai
Ingredients
Rice Noodles 8 oz
Firm Tofu 12 oz
Carrots 2 medium
Red Bell Pepper 1 large
Broccoli Florets 1 cup
Garlic 3
Fresh Ginger 1 tbsp
Soy Sauce 3 tbsp
Rice Vinegar 2 tbsp
Agave Syrup 1 tbsp
Peanuts 1/4 cup
Green Onions 2
Lime 1
Cilantro 2 tbsp
Instructions
Prepare Noodles
Soak rice noodles in hot water for about 10-15 minutes or until tender. Drain and set aside.
Cook Tofu
In a large pan, heat oil over medium-high heat. Add cubed tofu and cook until crispy on all sides. Remove from pan and set aside.
Prepare Vegetables
In the same pan, sauté minced garlic and ginger until fragrant. Add julienned carrots, sliced red bell pepper, and broccoli florets. Cook until slightly tender.
